Good comment. I had my C for a month before I turned it over for the SRT8 and by the time I did I had done an intake, wheels, exhaust (Corsa!), tint and had demolded/debadged it.

I don't want wheels or suspension on the srt8 because to be honest stock is always best in that aspect. After seeing mine next to the srt8 I want to do the body kit and wheels(i know what just said) but they look measley next to mine - the steering wheel and interior carbon....that is why I keep thinking the 300 will cost me more

Well, this is a tough one but I know I would not be able to NOT mod the SRT as well.
I think, bud, you need to understand the mods will come. Then decide whether or not you can you afford the hit and the higher acquisition cost of the SRT8. That's the reality of the situation.
There is no denying that the SRT8 is a significant step up from an S. You can get to SRT performance and appearance levels with an S but it's a big cost addition.
