While the car is stopped (i.e. not in motion) hold down the ESP button until 'ESP Deactivated' is displayed in the EVIC on your dashboard... Once ESP is deactivated you should be able to do all the burnouts you want.

As for getting sideways, the procedure I described above does not completely deactivate the ESP system, but it will certainly allow you to kick the rear end out at will.
