I bought a 2007 C300 SRT8 and it drives heavier but more stable, but I am running it with ESP off since I think ESP burns up the pads.

Better to leave ESP on and have it save your life in an emergency, then to save a few dollars by getting 4,000 more miles out of your rear brake pads.
I'm also willing to bet that a real limited slip differential would go a long way to saving the rear pads.
