i saw a CV this weekend but it looked like darker grey then the grey option currently offered.

are there 3 interior colors offered now?

Don't know for sure, someone posted they have a black on black which may be this darker grey.

According to the Chrysler website, the interior color selection for the 300 series is as follows-

Medium Slate/Dark Slate Grey
Medium Slate/Light Greystone
Deep Jade/Light Greystone

my 2006 300C order has a new interior combo:

Dark Slate/Light Slate Grey

no idea if it is finding its way into 2005's as well
