I would trust the digital readout over the gauge, but you need to get a scantool connected and make sure the sensors are working properly. You can also test the cooling fans with a scantool.
You could also buy some temperature-rated wax pencils which will tell you how hot the engine is really getting.
And consider putting your thermostat back. That isn't likely to help the situation at all.
